No Meat Zone Recipes: Smokey Roasted Brussel Sprouts and Sweet Potatoes

With fall in full swing, there is nothing like a hearty serving of roasted vegetables to warm you from the inside out. Enjoy!

Smokey Roasted Brussel Sprouts and Sweet Potatoes

1 large sweet potato, sliced into 1/4 inch medallions
1 pound brussel sprouts, trimmed and halved
2 tbsp olive oil
1 tsp smoked paprika
Sea salt and pepper to taste

1. Preheat over to 425 degrees
2. In a large bowl toss together all ingredients
3. Place the mixture on an aluminum foil-lined baking sheet, making sure the vegetables do not overlap
4. Bake for 30-35 minutes, turning the vegetables once halfway through
