Every Thanksgiving, I visit my parents a little before dinner and then I have the full-blown holiday dinner at a friend's house (it's quite nontraditional but my dad prefers holiday lunch over dinner). Let's take an in-depth view on what I'm planning on stuffing my face with this upcoming Thanksgiving!
To start, I'm going to go low-key and bring a Tofurky Roast to my friend's house for dinner. I was planning on making a homemade holiday loaf but, since time will be tight, I'm taking the easy route. The roast will also be served with Tofurky's Savory Gravy.
Before my visit to my parent's house, I'm bringing veggie lasagna. Although it's not-so-traditional for Thanksgiving, my omnivorous mom and sister fell in love with the dish when I made it a few months ago. The recipe I will be using was inspired by and tweaked from Living Beyond the Box.
No Thanksgiving table is complete without pumpkin pie (at least my table isn't!). I recently made this delicious double-layered pumpkin pie cheesecake (from FatFreeVegan) for the sake of welcoming autumn but I am totally making it again for Thanksgiving. I'm positive it'll be a favorite.
My friends are planning on doing the rest of the cooking for us; they will make mashed potatoes with Earth Balance butter on the side (so that both omnivores and vegans can partake!), savory stuffing from Arrowhead Mills, and possibly a fresh green bean casserole.
This year's Thanksgiving will be great. I think the only downside to this wonderful holiday is that there are so many recipes to choose from but so little time!
