Breakfast is hands down my favorite meal of the day. Seriously though, what beats sipping a huge cup of coffee or tea and eating a delicious breakfast while scrolling through your morning news feeds? This is the time I use to plan the day ahead of me, and here are five great breakfasts to give you the energy you need.
I promise it's not as boring as it sounds. Whether it's rolled oats, quick oats or steel cut oats, there's a thousand ways to spice it up! Stir in peanut butter or almond butter to make it extra creamy. Add apple slices and top with sugar for an 'apple pie.' Stir in canned pumpkin and cinnamon for fall oatmeal. Or dried cranberries and dark chocolate pieces for an antioxidant treat.
2) Quinoa Porridge
Quinoa is packed with iron and complete protein, so it's a great way to start your day. Instead of simmering it in water, simmer it in nondairy milk! Fifteen minutes later you've got your porridge, and can add whatever toppings or spices you want.
3) Fruit Salad
A great way to get a mix of vitamins in the morning; top with toasted coconut or almond slices, and pair with whole grain toast.
4) Tofu Scramble
A vegan favorite, break up tofu in a skillet until it resembles scrambled eggs. Add nutritional yeast, cumin, garlic, salt and onion for a savory flavor. Mix in veggies like mushrooms, spinach, peppers, or tomatoes.
5) Loaded Bagel
Slather a whole grain bagel with vegan cream cheese or hummus, then layer with tomato, sprouts, lettuce, cucumber and maybe a slice of baked tofu!
