We eat a lot of granola bars around here. My hubby takes one to work almost every day and my kids are snacking machines. This recipe has no added sugar and has some protein from the peanut butter. Plus they are delicious! You can use any combination of fruit and nuts you want.
Cranberry and Dark Chocolate Granola Cups
Adapted from Fooducate
- 1/2 cup peanut butter
- 2 bananas, mashed
- 1/2 cup chopped nuts
- 1/2 cup total of dried cranberries (or whatever you choose)
- 1/2 cup dark chocolate chips
- 1 cup rolled oats
- 1 tsp vanilla
- Pinch cinnamon
- Mix all the ingredients together and spoon into muffin tin that has been sprayed with cooking spray. If you use a regular sized muffin tin you should get 12.
- Bake at 350 degrees for 15 minutes.
