No Meat Zone Recipes: Vegan Kamut Ditalini and Bean Salad


Kamut Ditalini and Bean Salad - Brought to you by Eden Foods.
Serves 6 | Prep Time 0:20 | Cook Time 0:10


12 ounces Eden Organic Kamut Ditalini
15 ounces Eden Organic Garbanzo Beans, drained
15 ounces Eden Organic Kidney Beans, drained
15 ounces Eden Organic Great Northern Beans, drained
1 cup celery, with the leaves, thinly sliced
3 large organic tomatoes, cut into chunks
1/2 cup fresh basil, chopped or fresh parsley
1 jar (12oz) water packed artichoke hearts, drained and quartered
2 Tablespoons Eden Extra Virgin Olive Oil
1 Tablespoon Eden Organic Brown Mustard
3/4 teaspoon Eden Sea Salt
1/4 teaspoon freshly ground black pepper
2 Tablespoons freshly squeezed lemon juice


Cook pasta according to package directions. Combine remaining ingredients in a mixing bowl. When pasta is done, drain and add to the bowl. Toss to mix. Let stand for 3 to 5 minutes and serve.
