No Meat Zone Recipes: Vegan Multigrain Protein Bars


Multigrain Protein Bars

These turned out really nice! They are softer (not super dense like a Cliff Bar). They’re also not sickeningly sweet. Mission accomplished.

  • 3/4 cup rolled oats
  • 1/4 cup whole wheat pastry flour (or white whole wheat flour)
  • 1/2 tsp. baking powder
  • 2 Tbsp. ground flaxseeds
  • 1/4 cup Jay Robb Brown Rice Protein Powder (or any protein powder)
  • 1/4 cup dried fruit (I used raisins)
  • 1/4 cup wheat germ
  • 1/4 cup almond meal/flour
  • 1/4 cup evaporated cane juice (or brown sugar, packed)
  • 2 Tbsp. canola oil
  • 1/3 cup water
  • 1 tsp. vanilla

1. Preheat oven to 350 degrees.
2. In a medium bowl, combine oats, flour, baking powder, flax, protein powder, dried fruit, wheat germ, and almond meal. Set aside.
3. In a separate bowl, combine the sugar, oil, water, and vanilla. Mix until emulsified and the sugar has dissolved.
4. Pour the wet into the dry and stir to combine.
5. Place batter in a greased pan (I used 8×8 and it yielded a thinner bar; use a slightly smaller pan for a thicker bar). Pat down.
6. Bake for approx. 20 minutes (until the top is golden). Let cool completely before cutting into bars.
