Almond Curry Noodles

This is a really simple dish to make, and with only a few ingredients. I like to serve it with sprouts/salad. Note: A few minutes before the noodles are al dente, I add the veggies to the same pot so the veggies aren't too soft (because they'll only cook a few minutes before straining).

Ingredients:
  • fresh carrots and/or green beans
  • soba noodles
  • apple cider vinegar
  • green curry paste
  • almond butter
Directions:
  1. Cut the veggies. (I prefer julienne-style for this dish.)
  2. Cook the soba noodles and veggies.
  3. Mix a couple splashes of apple cider vinegar with a spoonful of green curry paste. Add a few heaping spoonfuls of almond butter. Mix well.
  4. Experiment adding these ingredients to taste (tang, spice, substance).
  5. Strain the noodles/veggies and lightly rinse with cold water.
  6. Mix/toss the almond curry sauce with the noodles and veggies and enjoy!
