They can be used raw in salads. I love so many and depending on the time of year. During the summer - how can you beat a fresh light summer salad with all the goodness of the summer veggies. Winter the hardier veggies in a warm and comforting soup or as the main dish just roasted. I love eggplant grilled with fish flakes and soy sauce- love asparagus cooked crisp with a touch of lemon.
