No Meat Zone Recipes: Vegan Sesame Soba Noodles

This is one of my favorite vegan dishes because it is simple, quick and healthy. Sesame, miso and brown rice vinegar make a fantastic dressing. Try adding some grated fresh ginger root for extra zest!


1 package soba noodles
3 spring onions
2 cucumbers
2 red/orange/yellow bell peppers


2 tbsp brown rice vinegar
1 tbsp sesame oil
1 tsp miso
1/4 cup water
1 tsp black sesame seeds

*I tend to not measure exactly for dressings and just taste test. Miso can be salty, so I suggest adjusting depending on how strong a dressing you prefer.


Simply cook the soba noodles according to box directions, rinse in cold water, and set aside to cool. Combine noodles with chopped spring onions, cucumbers and peppers. Whisk dressing in small bowl and then add to dish, mixing well. Serve at room temperature, or make ahead of time and chill in the refrigerator overnight.

Note- tastes great with grilled tofu for a more substantial meal.
