No Meat Zone Recipes: Vegan Olive and Bacon Tapenade

 The Super Bowl may be over, but that doesn’t mean you’ve hit your delicious snack quota for the year by any means! Finger foods can be eaten all year long, whether you’re celebrating a holiday or simply having your friends over for a movie marathon or casual night in. And if your stomach is still recovering from Super Bowl indulgence, there are plenty of lighter but still delicious snacking options out there, especially if you follow a vegetarian diet. From light bruschetta to spicy vegetarian hot wings, there’s no reason for vegetarians or vegans to miss out on any appetizer favorites.

If you’re looking for an easy appetizer to bring to a party or a light snack to keep in your fridge, this vegan olive and bacon tapenade is a great option. It only takes 10 minutes to throw together and can easily be doubled or tripled depending on how many people you’re feeding. The Smart Bacon® mixed in with the feta, olives and lemon juice gives this tapenade amazing flavor and as a bonus, it can be mixed in with hot cooked pasta for a delicious light lunch or dinner option.

Vegan Olive and Bacon Tapenade
Prep Time: 10 min
Serves: 4-6

4 slices Smart Bacon®
½ cup vegan feta cheese, crumbled
½ cup sliced Greek-Style black and green olives
2 Tbsp fresh basil, cut into thin strips
1 Tbsp fresh lemon juice
1 Tbsp extra virgin olive oil
½ tsp freshly minced garlic
1/8 tsp freshly cracked pepper
Baguette slices, pita chips, crackers or hot cooked pasta

In a medium mixing bowl combine all ingredients except for baguette slices/crackers. Spoon a heaping tablespoon of tapenade onto each baguette slice or cracker. Serve immediately.
