If you’re looking for an easy appetizer to bring to a party or a light snack to keep in your fridge, this vegan olive and bacon tapenade is a great option. It only takes 10 minutes to throw together and can easily be doubled or tripled depending on how many people you’re feeding. The Smart Bacon® mixed in with the feta, olives and lemon juice gives this tapenade amazing flavor and as a bonus, it can be mixed in with hot cooked pasta for a delicious light lunch or dinner option.
Vegan Olive and Bacon Tapenade
Prep Time: 10 min
4 slices Smart Bacon®
½ cup vegan feta cheese, crumbled
½ cup sliced Greek-Style black and green olives
2 Tbsp fresh basil, cut into thin strips
1 Tbsp fresh lemon juice
1 Tbsp extra virgin olive oil
½ tsp freshly minced garlic
1/8 tsp freshly cracked pepper
Baguette slices, pita chips, crackers or hot cooked pasta
In a medium mixing bowl combine all ingredients except for baguette slices/crackers. Spoon a heaping tablespoon of tapenade onto each baguette slice or cracker. Serve immediately.
