No Meat Zone Recipes: Raw Vegan Sweet Potato Soup

Raw Vegan Sweet Potato Soup
(serves 6)
3 medium-large sweet potatoes, washed and diced
1 tbs cinnamon
2 tbs brown sugar (or sweetener of your choice)
4-6 cups vegetable stock/water (you can also use dairy free milks like almond for a creamier texture)
cayenne pepper (optional)

After washing and chopping the sweet potatoes, add them into a high powered blender
add about 3 cups of chosen liquid to your mixture
Blend until almost smooth*
add brown sugar, spices and continue to blend
add salt to taste, pour and enjoy!

*I chose to do this step because I find that at times spices will fly up and on the sides of the blender when added immediately. Adding them after a fairly smooth consistency has been reached prevents this.
