No Meat Zone Recipes: Vegan Classic Potato Salad

A vegan take on a classic favorite.

Vegan Potato Salad

  • 6-8 baking potatoes
  • 4 dill pickles, chopped
  • 2 green onions, chopped
  • 6 tablespoons Vegenaise
  • 3 tablespoons mustard
  • 1/4 cup almond milk
  1. Bake or microwave the potatoes. Let cool.
  2. Cut the potatoes in chunks.
  3. Mix the remaining ingredients.
  4. Toss everything together and chill.
