SUNDAY
Breakfast
Tofu Scramble with mushrooms, onions, bell pepper, and kale
Chocolate almond milk
Lunch
Grilled “cheese” Daiya on pumpernickel bread
Dinner
Pasta Puttanesca - whole wheat pasta with olives, zucchini, yellow squash in a tomato sauce
Ciabatta bread

MONDAY
Breakfast
Ezekiel 4:9 cereal with almond milk and banana
Lunch
Tossed salad with seitan strips, olives, garden tomatoes, nutritional yeast
Dressing - lemon juice, minced garlic and oregano
Dinner
Black bean soft tacos with lettuce, tomato, onion, Daiya pepperjack, and salsa
Spanish rice

TUESDAY
Breakfast
Cantaloupe
Pumpernickel toast with grape jelly
Lunch
Vegan Sushi
Dinner
Meatless chicken patty on whole wheat roll, with lettuce, tomato, pickles, and veganaise
Roasted garlic herb potato wedges
Asparagus basted in olive oil, garlic, and dash of cayenne pepper lightly sauteed

WEDNESDAY
Breakfast
Steel cut oatmeal with cinnamon and crushed walnuts
Lunch
Salad wrap with lettuce, tomato, cucumbers, olives
Vegan ranch dressing, veganaise, apple cider vinegar, garlic & onion powder, pepper
Dinner
Whole wheat ziti with garlic, oil, kale, dices Field Roast vegan sausage
Small side salad

THURSDAY
Breakfast
Whole wheat bagel with vegan cream cheese
Blackberries or blueberries on the side
Lunch
Rice & beans with salsa
Dinner
Portabello mushroom cooked on the grill
Corn on the cob cooked on the grill
Vegan garlic mashed potatoes, red potatoes with skin left on

FRIDAY
Breakfast
Smoothie - Almond milk, ice, strawberries, banana, blueberries, and one kale leaf
Lunch
Vegan chili with corn chips
Dinner
Buffalo style tempeh- steamed then marinated in buffalo sauce and baked
Pan roasted brussels sprouts
Small side salad

SATURDAY
Breakfast
Blueberry vegan pancakes
Meatless sausage patty
Lunch
Vegan tuna sandwich made with mashed chickpeas on rye bread
Dinner
Pizza, tomato sauce, garlic, black olives, artichoke hearts & Daiya mozzarella cheese
