Indian cuisine is one of my favorites. It generally doesn't look appealing in photographs, but the taste is out of this world. Naan, dal, dosa, korma and curry-OH MY! This dish is Baingan Bharta with a side of garlic dal and chapati. Bhartas are typically North Indian in origin and can be made from a variety of vegetables. This recipe uses Baingan (eggplant) and is really easy to make. You can find the recipe here.
