Time for some vegan lasagna: Tofutti to release dairy-free ricotta cheese

Time to make my favorite classic Italian pasta dish, lasagna. Vegan noodles: check. Vegan marinara sauce: check. Vegan cheese: check. Vegan ricotta: check.

Wait, what? Did I just say vegan ricotta? You bet! Tofutti Brand, purveyors of dairy-free Vanilla Cuties, Better Than Cream Cheese and Sour Supreme, have added a new item to its vegan-friendly product line: Better Than Ricotta Cheese.

Following the motto, “It's not what we have in our product, it's what we don’t have that makes it better,” the ricotta is dairy- and cholesterol-free and contains no butterfat, gluten, casein, or any animal products.

In a recent interview with Joan Verdon of NorthJersey.com, Tofutti founder David Mintz revealed that the product tastes similar to its dairy counterpart and explained why Better Than Ricotta Cheese was so challenging to create.

“We made a cream cheese,” said Mintz. “That was tough. But ricotta has a certain type of texture. Even dairy people have a difficult time with it. That's why you don't see many companies making ricotta. I've spoken to a number of dairies and they say, well, it's a temperamental product, it's not that easy to make, there's a lot of labor involved.”

So my vegan friends, gone are the days where you must forgo a rich ooey gooey lasagna or ravioli dish. Expect Better Than Ricotta Cheese to hit the shelves in the coming months.
