No Meat Zone Recipes: Veggie Burger with Lentils and Mushrooms

Veggie Burger with Lentils and Mushrooms

  • a onion chopped
  • some finely chopped garlic
  • 250g of portobello mushrooms (the small brownish ones)
  • a tin of brown lentils
  • a little bit of flour
  • some lemon juice
  • some olive oil
  • salt and pepper
  • some fresh basil
  • burger buns
  • sliced tomato
  • lettuce
  • sprouts
  • hummus

Add the chopped onions and some olive oil to a pan and saute until soft, add the garlic. Chop the mushrooms into quarters (or smaller) and add to the pan, let them cook for a couple of minutes, turning every now and again.

Drain the lentils and place on a dinner plate, smash with a fork or a potato masher into a paste. Add a little lemon juice, some shredded basil, season and mix. Add the onions and mushrooms to the lentil paste and combine everything well. Allow the mixture to sit for 30 minutes – this lets it stick together better.

Form into rounds, dip in a little flour, to coat the outside, and place into a heated pan with a little olive oil. Cook on either side for 4-5 minutes, until golden. Serve on a bun with lettuce, tomato, sprouts and hummus.
