No Meat Zone Recipes: Peanut and Ginger noodles

These peanut noodles are very easy to make and they taste just as good cold as they do hot.

  • 8 oz whole wheat pasta
  • 1 bunch of green onions
  • 2 Tbs oil (use sesame if you have it)
  • 1 tsp minced ginger
  • 1/3 cup natural peanut butter
  • 1/4 cup tamari
  • 1/4 cup hot water
  • 1 Tbs apple cider vinegar
  • 1 tsp sugar
  • 1/4 tsp crushed red pepper flakes

Cook pasta in a large pot of boiling water. While pasta is cooking, combine oil and onions in a skillet. Saute over low heat until tender. Add ginger; let cook for 1-2 minutes. Mix in the rest of the ingredients. Drain pasta when finished and toss everything together. Add tofu and steamed snow peas to make a tasty meal.
