No Meat Zone Recipes: Vegan French Onion Soup


French Onion Soup

  • 1/2 cup vegan margarine
  • 2 tablespoons olive oil
  • 4 cups sliced onions
  • 32 oz vegetable broth
  • 2 cups water
  • 2 cloves garlic, crushed
  • 1 teaspoon sugar
  • 1 teaspoon dried thyme
  • salt and pepper to taste
  • toasted wheat bread
  • vegan cheese (optional)

1. Melt margarine with olive oil in an pot on medium heat. Add onions and continually stir until brown and tender.
2. Add broth, water, garlic, thyme, sugar. Season with salt and pepper. Simmer for 30 minutes.
3. Ladle soup into oven safe serving bowls. Place one slice of toast on top of soup. Cover toast with vegan cheese shreds. Place bowls on cookie sheet and broil in the preheated oven until the cheese melts. If you do not have broiler-safe bowls, you can get a similar effect by placing the bowls in the oven at 375 degrees. Keep an eye on the cheese.
4. Serve. Enjoy!
