Seitan, which is also known as wheat meat or gluten meat, is an excellent plant-based protein for vegans and vegetarians. Once you get the hang of a basic seitan recipe, your meat-free meal options increase substantially.

VEGAN
Basic Seitan
Ingredients:
- 2 cups vital wheat gluten
- 1 tsp paprika
- 1 tsp thyme
- 1 tsp sage
- 1 tsp onion powder
- 2 cups water
Mix dry ingredients then wet, form into loaf, cut 12-15 pieces with kitchen shears, simmer in vegetable broth (or water) for 1.5 hours.
