Chipotle Sweet Potato Chili
Perk: No fancy ingredients or culinary skills needed.
Nutrition Perk: Sweet potatoes are nutritional superstars loaded with carotenoids, vitamin C, potassium, and fiber.
Ingredients
- 1 T olive oil
- 1 medium yellow onion, chopped
- 1 medium red bell pepper, seeded, chopped
- 2 (or many more) garlic cloves, minced
- 1½ pounds sweet potatoes, peeled, cut in chunks
- 1 14.5-ounce can crushed tomatoes
- 1 15.5-ounce dark kidney beans, rinsed
- 1 C water
- Chipotle Chilies in Adobe Sauce (small can in the Mexican aisle)
- Salt
- Heal oil in large pot over medium heat.
- Add onion, pepper, garlic.
- Cover and cook until soft—5 minutes.
- Add sweet potatoes and stir.
- Add tomatoes, beans, water, salt.
- Cover and cook on low for an hour or so (not necessary if you don’t have time.)
- When ready to serve, add a couple of chipotles or just a fraction of one chipotle finely chopped – very hot!
