No Meat Zone Recipes: Vegan Chipotle Sweet Potato Chili


Chipotle Sweet Potato Chili

Perk: No fancy ingredients or culinary skills needed.
Nutrition Perk: Sweet potatoes are nutritional superstars loaded with carotenoids, vitamin C, potassium, and fiber.

  • 1 T olive oil
  • 1 medium yellow onion, chopped
  • 1 medium red bell pepper, seeded, chopped
  • 2 (or many more) garlic cloves, minced
  • 1½ pounds sweet potatoes, peeled, cut in chunks
  • 1 14.5-ounce can crushed tomatoes
  • 1 15.5-ounce dark kidney beans, rinsed
  • 1 C water
  • Chipotle Chilies in Adobe Sauce (small can in the Mexican aisle)
  • Salt
  1. Heal oil in large pot over medium heat.
  2. Add onion, pepper, garlic.
  3. Cover and cook until soft—5 minutes.
  4. Add sweet potatoes and stir.
  5. Add tomatoes, beans, water, salt.
  6. Cover and cook on low for an hour or so (not necessary if you don’t have time.)
  7. When ready to serve, add a couple of chipotles or just a fraction of one chipotle finely chopped – very hot!
Serve with Tofutti Better Than Sour Cream and corn bread. It’s even better the day after.
