
The following recipe was inspired by a fellow vegetarian blogger at herbivoracious.com. While his posted recipe looked spectacular, I didn't have all the ingredients handy - - - so I made a Daelyn version. :-)
Asian Tofu Bake
Preheat oven to 400 degrees. Cut one block of tofu into 5 sections. Set each section on a separate piece of foil. Score each section by cutting slits into the tofu - this will allow the sauce to penetrate inside. In a bowl mix some soy sauce, wasabi, and water. (You can also do this with hot sauce - just hot sauce and water.) Pour mixture over the tofu. Be sure to separate the scored areas so the mixture gets into the slits.
Add your choice of vegetables on top of the tofu section. I used corn, onions, shredded carrots, broccoli, red peppers, snap peas.
Wrap foil around tofu by grabbing the edges, pulling up and folding the top over. Be sure to label the foil if you make different varieties for different people. My oldest daughter wanted the hot sauce mix and my two younger daughters got a soy sauce mix without the wasabi.
I like the extra protection of a baking dish, but you can use a baking sheet if you are confident in your foil wrapping abilities! Bake for 25 minutes at 400 degrees. Serve with a side of rice.
