Note: The picture isn't very pretty but the soup is d.e.l.i.c.i.o.u.s!

Vegetarian French Onion Soup

INGREDIENTS
* 1/2 cup margarine
* 2 tablespoons olive oil
* 4 cups sliced onions
* 32 oz vegetable broth
* 2 cups water
* 2 cloves garlic, crushed
* 1 teaspoon brown sugar
* 1 teaspoon dried thyme
* salt and pepper to taste
* toasted wheat bread
* sliced provolone or mozzarella or swiss cheese

DIRECTIONS
1. Melt margarine with olive oil in an pot on medium heat. Add onions and continually stir until brown and tender.
2. Add broth, water, garlic, thyme, brown sugar. Season with salt and pepper. Simmer for 30 minutes.
3. Ladle soup into oven safe serving bowls. Place one slice of toast on top of soup. Cover toast with cheese slices. Place bowls on cookie sheet and broil in the preheated oven until the cheese bubbles and browns slightly. If you do not have broiler-safe bowls, you can get a similar effect by placing the bowls in the oven at 375 degrees. Keep an eye on the cheese.
4. Serve. Enjoy!
