Note: Again, not the prettiest picture but a fantastic recipe. I actually ended up baking the Bread Pudding for about 50 minutes before I felt it was ready. I used soy milk and it worked perfectly!
Bread Pudding
Ingredients
* 10 slices white bread, cubed or shredded
* 1/2 cup raisins (optional)
* 1/4 cup margarine, melted
* 1 teaspoon ground cinnamon
* 6 eggs
* 3/4 cup white sugar
* 2 teaspoons vanilla extract
* 1/2 teaspoon salt
* 3 cups hot milk/soy milk
* 1 teaspoon ground nutmeg
Directions
1. Preheat oven to 375 degrees.
2. In a large bowl, combine bread cubes or shreds, raisins (optional), melted margarine, and cinnamon. Mix well. Transfer to a 2 quart baking dish.
3. In a separate bown, beat the eggs. Stir in sugar, vanilla, and salt until sugar is dissolved. Slowly add the hot milk or soy milk. Pour egg mixture over bread cubes and sprinkle with nutmeg. Set aside to soak for 5 minutes.
4. Bake in preheated oven for 30 minutes or until a knife/toothpick inserted into the center comes out clean.
