Progresso Lentil Soup

Two thumbs up for Progresso Vegetable Classics Lentil Soup. This stuff is delicious! This is definitely one of my favorite soups now! Another two thumbs (if I had an extra two LOL) up for Progresso's awesome vegetarian/vegan labeling. Choose your soup, flip the can over, look right above the ingredients. You will find the can labeled as Non-Vegetarian, Vegetarian, Vegan. Very very handy for those of us who normally have to read through all of the ingredients!

RECIPE: Cheesy Noodles & Pesto Cheese Bread

Cheesy Egg Noodles: Boil egg noodles until soft. Drain water. Add butter, Italian seasoning, Cheesoning. Put into a baking dish. Add shredded cheese. Cover with foil. Bake at 375 degrees for 15 minutes.

Pesto & Cheese Bread: Make some pizza dough from mix. Place on a greased pan. Spread pesto on pizza dough. Sprinkle cheese on top of pesto. Fold pizza dough up... kind like a calzone. Bake at 400 degrees for 15 minutes.

Boca Meatless Italian Sausage

If you have thought about trying a vegetarian meatless product, but you just arent sure you would like it.... you HAVE to try the Boca Meatless Italian Sausages. They are absolutely delicious! I would rank this as my favorite meatless product right now. The sausages are perfect on a thick bun, smothered in mustard and sauerkraut. You can find this Boca product in the freezer section of your local grocery store.

RECIPE: Black Bean & Mushrooms Over Rice

Black Bean & Mushrooms Over Rice

Ingredients:
1 15 oz can black beans
1 4oz can mushroom pieces and stems
1 tsp minced garlic
Seasonings: cilantro, chili powder, salt
Dash of flour
1 tbs vegetable oil
Rice

Directions:
Make rice as directed on package. Heat vegetable oil in pan on medium heat. Add black beans, mushrooms, garlic, seasonings. If the mixture is too liquidy, add flour to thicken. Simmer on low for 15 minutes. Serve over rice. Enjoy!
